Cookie Dough

This recipe is a must-try for all my fellow chickpea lovers out there! I never thought that chickpeas would be such a magical ingredient for sweet recipes as well as for savoury ones. But they really are!

They are high in protein and make the perfect cookie dough consistency. Trust me this cookie dough is highly addictive! But you can eat a lot if it without feeling guilty because it’s not only super yummy but also super healthy 😉

Ingredients

  • 450g chickpeas
  • 4-6tbsp maple syrup
  • 3tbsp oat milk (or any plantmilk)
  • 1/2tsp vanilla powder
  • 2tbsp peanut flour (or peanutbutter)
  • a pinch of salt
  • 70g quick oats (or oat flour)
  • optional: cacao nibs

Directions

  1. Blend the oats to flour (in case you don’t have oat flour) and fill them into a bowl
  2. Drain and rinse the chickpeas and fill them into your blender together with all the other ingredients
  3. Blend and add it to the bowl
  4. Kneed the flour into the dough with your hands or a mixer
  5. You can form it to balls and roll it in cacao nibs, eat it plain or with berries or put it into your nicecream (cookie dough nicecream)
