Today I have pineapple-orange cookies for you! Inspired by Kookie Cat! Since I’ve tried their cookies for the first time I wanted to try baking them myself because I was really surprised how good they are! Actually the best cookies I’ve ever tried. No, I’m not sponsored. But I highly recommend you to try them if you can get your hands on them, especially the pineapple-orange one! Or just try my recipe š
I made two different versions, one higher in calories and with the same ingredients as the original and one with less ingredients, lower in calories, oil-free and just as delicious! You can decide which one you wanna make depending on the occasion. Let’s start with the recipe! I wrote two different ingredient lists for every version and the directions are the same for both.
Ingredients Version 1
- 100g quick oats
- 80g dried pineapple or 140g fresh pineapple
- 60g cashew nuts
- 40g coconut blossom nectar
- 40g dessicated coconut
- 20g coconut oil
- 1tsp cinnamon
- 1ml orange oil
Ingredients Version 2
- 100g quick oats
- 100g dried pineapple or 170g fresh pineapple
- 40g cashew butter or cashew nuts
- 1tsp cinnamon
- 1ml orange oil
Directions
- Soak the dried pineapple in hot water for a few minutes. (You can skip this step if you have fresh pineapple)
- Drain the pineapple (but keep the water, we don’t wanna waste all the nutrients! You can just drink it or use it for your oatmeal or sth like that)
- Add all ingredients except for the oats into your blender and blend them on highspeed.
- Add the oats and blend for a few seconds or until you have a nice dough mixture.
- Preheat the oven to 175Ā°C.
- Line a baking tray with parchment paper, form the cookies with your hands and place them on the paper.
- Bake the cookies for about 12 minutes. I recommend turning them over after 10 minutes to give them a golden brown look on both sides.
- Take them out of the oven and let them cool down. Enjoy š
