I always loved having pasta with pesto. It’s probably one of the easiest and quickest meals and still super delicious. But since the storebought pesto often contains parmesan cheese and lots of oil I decided to make my own healthy, oil-free and nut free version. But of course you could add some pinenuts as well if you like, I just didn’t have some at home. And it’s super quick to make as well because all you have to do is throw the ingredients into the blender and blend them.
Ingredients
- pasta of your choice
- 1/2 avocado
- big handful fresh basil
- 2 small handfuls fresh baby spinach
- 1 clove garlic
- juice of 1/2 lemon
- seasalt
- black pepper
Directions
- Cook your pasta according to the package directions.
- Blend all the pesto ingredients while the pasta is cooking.
- Drain the pasta, fill it into a bowl, add the pesto and top it off with some nutritional yeast, roasted cherry tomatoes, fresh basil, black pepper or what ever you prefer š
