These pancakes are super quick & easy to make, healthy and delicious! They’re high in protein because of the chickpea flour. No protein powder needed and you don’t even taste it. Feel free to add cacao powder, chocolate chips, blueberries or what ever else comes to your mind to change them up a bit!
Ingredients
- 50g oat flour
- 50g chickpea flour
- 20g corn starch / tapioca starch
- 20g coconut blossom sugar
- 2tsp baking powder
- 1tsp cinnamon
- 40g banana
- 100ml plantmilk
Directions
I like to make the batter in the blender but you can also mix everything together in a bowl and mash the banana with a fork!
- add the plantmilk to the blender first to avoid the dry ingredients sticking to the bottom
- then add all the other ingredients except for the baking powder and blend until the batter is nice and smooth
- add the baking powder and turn the blender on low speed for a few seconds
- preheat a non-sticking pan to medium heat and add some coconut oil if needed
- add the dough to the hot pan with a spoon and create thick circles to get nicely thick and fluffy pancakes
- they don’t take long, flip them when they start turning brown on the edges
- enjoy them with your favourite toppings like nutbutters, raspberry-chia jam, fruit, maple syrup, vegan chocolate spread, nicecream etc
